Lefse Family Recipe

8 cups mashed potatoes (about 5 lbs.) - ½ cup butter (1 cube) -
¾ to 1 cup whole milk or half and half - 2 tsp. salt - 4 cups flour
Rinse and peel the potatoes, then cut in quarters. Make sure the potatoes are cut similar in size so they cook evenly. Boil potatoes in a large pot of salted water until a fork pierces them easily. Strain, return to the pot, and add butter, salt and half & half. Beat with an electric mixer until creamy (a few lumps are ok!)
Let the potatoes cool for about an hour, then cover and refrigerate overnight. To the cold potatoes, add 4 cups of flour and knead with your hands in the bowl.
Roll the Lefse into balls that are about 1/3 cup of dough. Use a well floured pastry cloth and begin rolling with a rolling pin. Make sure to keep the rolling pin and pastry cloth floured at all times to avoid getting the Lefse stuck.

Roll the dough a few times on one side, then turn over and roll again. You will turn the dough over several times to get it to a circle about 14”-18”across (Lefse will be thin). Carefully run a Lefse stick under the Lefse and transfer to a hot grill. Make sure the grill is very hot (about 500 degrees). Lefse will start to bubble up and when it has golden brown spots, flip it over and brown the other side. Do not over cook or it will become hard and dry. Lift the Lefse off the grill so the circle is folded in half and place between two towels so it stays completely covered. Fold the towels over to insure it stays cove red. You can even sprinkle the towels with a bit of water so they are slightly damp a nd the Lefse doesn’t dry out. Top with softened butter, brown sugar and cinnamon. Roll up, cut into 4 sections and ENJOY!  Makes around 20 Lefse

Bev's Spuds Recipe

6 cups spuds
2 cups cottage cheese
1 cup sour cream
2 cups grated cheddar cheese
½ cup green onions
Salt and pepper to taste (we also like Johnny’s Seasoning)
Boil potatoes until they are tender when pierced with a fork. Strain,
then cut into bite-sized pieces. In a large bowl, mix potatoes, cottage cheese, sour cream, whites of onions and salt and pepper. Transfer to a baking pan and top with remaining green onions and paprika.
Cover with foil and Bake at 350 for about 30-45 minutes.
